Description
Shiratamako () is a type of glutinous rice flour (also called sweet rice flour) that is made from mochigome (/, glutinous short grain Japanese rice).
Shiratamako goes through a special processing; washing, soaking, grinding in water, the liquid is then pressed, dried and crushed turning into coarse granules.
Mochi made with Shiratamako has a smooth, refined, and elastic texture.
