Ingredient for Warabi Mochi
Warabiko () refers the starch of the root of the warabi plant in Japan. While warabi is a type of edible fiddlehead greens, its root starch gives a mild sweetness and when cooked with water, provides a transparent, lightly crunchy yet yielding gel texture that is quite unique.
The rare hon-warabi-ko (true warabi starch powder) refers to the starch coming from 100% warabi roots, which are now scarce. The popular Japanese confectionery warabi mochi is mostly made with a blended starch that may or may not contain hon-warabiko. Only the higher quality blend would contain some hon-warabi-ko for the authenticity in taste and texture.
