Description
Oak wood dust ismost widely used in commercial smoking, thanks to the strong smoky aroma it gives food, which works on many ingredients. The aroma is wonderful with sausages, or blended with cherry for smoking turkey. The popular wood dust isenormously versatile though, and produces a heavily smoky flavour which is also great with all red meat, heavy game and pork.
For use with the Cameron Stovetop Smoker, the ProQ Cold Smoke Generator (100g produces 10 hours of cold smoke), and some hand held smokers.
