Picholine olives, also known as cocktail olives, are popular French olives used in salads and as an appetiser.
The firm, green oliveshave a mildly briny and fruity flavour that gives a refreshing accent to fish and seafood dishes. Picholine olives pair well with brie, artichokes and prosciutto on antipasti platters. Crush the green olives into a coarse paste for a mild tapenade to serve with goats’ cheese. Picholine olives are also an ideal, crisp garnish for a Martini cocktail.
