Monjardin lentils are produced in Navarra in northern Spain and cooked gently to retain their texture. In Spain, they are often simmered slowly with onions, potatoes and chorizo to create a hearty stew to serve with crusty bread. Alternatively, give them a French twist and braise them with red wine, garlic and thyme. Top with Toulouse sausages for a simple supper thats full of flavour.
