Monjardin haricot beans are produced in Navarra in northern Spain, where they are often added to hearty chorizo stews. The small, white beans have a smooth, buttery texture and a mild, creamy flavour. A store cupboard staple for simple suppers, these beans easily absorb other flavours and aromas so theyre ideal for soups, casseroles and salads.
Try blending the beans with garlic, olive oil and lemon juice to create a smooth white bean dip. They are also delicious braised in tomato sauce to serve on chargrilled sourdough.
