Messermeisters Oliva Luxe flexible filleting knife allows you to remove fish from the bone with high level precision, control and minimal waste. Made in Solingen, Germany which is world-renowned for quality stainless steel, this flexible blade bends to the curves and nooks of the fish bones to cleanly and professionally remove fillets from whole fish.

This filleting knife is made of a high carbon 1.4116 stainless steel for excellent lasting power and resistant to corrosion, and the blade ranks 57-58 on the Rockwell hardness sale. This makes a tough knife for intricate slicing; it maintains strength, hardness and durability.
