Description
Sesame oil is a highly prized flavouring in Chinese cuisine truly a must-have for your Chinese store cupboard. Made from roasted sesame seeds, this amber-coloured oil has a distinctive nutty aroma and taste. Indeed, its Chinese name means fragrant oil.
Because its fragrance is volatile and quickly lost through heating, sesame oil is traditionally used in cold dressings or added to cooked dishes at the end of the cooking process, away from direct heat. Use it in salad dressings, cold sauces or in dipping sauces or add a dash to freshly stir-fried dishes.
