Description
Pappardelle originated in Tuscany, a region famous for its rich meaty sauces. The wide, flat ribbons trap the sauce so that each mouthful is as delicious as the last. Serve pappardelle with a slow cooked ragu made with rabbit or wild boar. Or, try a venison sauce flavoured with red wine, pancetta and juniper berries.
Filotea pasta is slow dried and bronze drawn. This process gives it a rough, porous texture that helps sauces to cling. Once cooked, it has a silky mouthfeel with a little bite, just like fresh pasta.
