The umami paste is made from koji white rice thats inoculated with a naturally occurring fermentation culture. It breaks down the rice into a paste that has an intensely umami flavour. The koji then helps to intensify the umami of anything you add it to! Here its mixed with soy sauce, giving it a touch of extra saltiness and sweetness. The ginger adds extra warming sweetness.
