Rich in iron and low in cholesterol, venison is a great alternative to beef or pork and the meat breaks down beautifully after long, slow cooking. Keep a jar of this flavourful ragu in your cupboard for nights when you want to spend less time in the kitchen and more time on the sofa.
To serve, simply warm up the ragu and toss it with cooked pasta. Long, ribbon-shaped pasta like pappardelle and tagliatelle is perfect as the wide strands will capture the morsels of slow-cooked meat. Add a grating of Parmesan and pour yourself a glass of red wine – Italian, of course!
